FEATURED CHEESES AT WCM

Brie Courrone

Imported from France, is consistently excellent. Creamy and rich ,without being overpowering to the palate. Brie is characterized by an edible, downy white rind and a cream-colored, buttery-soft interior that should “ooze” when at the peak of ripeness.

Artikaas Red Wax Gouda

Prairie Breeze

White cheddar is aged for a minimum of 9 months and made with vegetarian rennet and no added color. Sweeter than your typical cheddar, crumbly yet creamy with a little crunch from the calcium crystals developed during the aging process. Try it grated on a salad, in soup, or in that special mac & cheese! Grill a panini sandwich or enjoy with a slice of apple pie. A must on any cheese plate, your guests will love it!

Parmigiano-Reggiano

Made from raw cow’s milk. The whole milk of the morning milking is mixed with the naturally skimmed milk of the previous evening’s milking resulting in a part skim mixture. The wheel is then put into a brine bath to absorb salt for 20–25 days. After brining, the wheels are then transferred to the aging rooms for 12 months. Traditionally, cows have to be fed only on grass or hay, producing grass fed milk. The product is aged an average of two years. True Parmigiano-Reggiano cheese has a sharp, complex fruity/nutty taste with a strong savory flavor and a slightly gritty texture.

Laubsher Cheddar Cheese

This medium cheddar is aged between 2 and 3 years. White or yellow are available. Laubsher cheese is produced in Jamestown, New York and has been in business 52 years. It is a great melter and can be used in sauces to top cooked vegetables. This cheese is used in many of our homemade dishes and soups. Stop by our cheese shop and ask for a sample!

Is a mild hard cheese that is aged for approximately three months, but can be aged longer changing the flavor of the cheese. This Gouda is made in 5lb and 10lb wheels, placed in a brine coated with wax, and placed in a cheese cave to age. This creamery is located in Wauseon, Ohio and is the only creamery in this area to produce cheeses using the milk of goats raised on their own farm.

Farm Country Cheese House

This creamery works in partnership with local Amish Farmers to create fresh, antibiotic-free cheese. Located in Lakeview, Michigan, their cheeses are pure, simple and clean. Amish traditions and practices are followed to produce the milk. The cows are raised on small farms where herds of only 4 to 20 cows are hand milked twice daily. Flavored “jack” styles are customer favorites!
